Last month the dishes arrived like bright, colorful jewels from the kitchen of David Kinch.Here is a celebrated plate — Into the Garden — in which choice morsels of what’s freshest and most appealing from Kinch’s grower, Love Apple Farm. Served on an Annieglass plate, almost too pretty to eat. Almost. A true bit of conceptual cookery, this plate involved edible borage, calendulas, nasturtium, shaves of this and that herb, thumbnail lettuces. There was also a gossamer dot of sheer foam, flavored foam, possibly sweet corn (one of the theme flavors of that late summer dinner) – in short an organic rococo garden of the culinary imagination.
